Technical routes

Our working philosophy has always been to respect nature, hence the obviousness of the organic certification since 2012.

Soil maintenance

Aucun herbicide n’est utilisé à ce jour. Des binages sont régulièrement effectués en fonction de la poussée de l’herbe. Au printemps, un décavaillonnage est réalisé.
The owner seeks to encourage the establishment of the root system in depth in order to keep his new plots until the 8th generation.

Green operations

L’ébourgeonnage est réalisé sur la totalité des cépages. L’éclaircissage ou vendange en vert est effectué sur les plantiers.

Phytosanitary treatments

Grape worms: on the estate, sexual confusion is used. No insecticides are used.
Powdery mildew: this fungus is controlled with sulphur, as soon as possible, especially on sensitive plots.
Late blight: no great pressure except in 2018

Winemaking

Raw material

The owners are looking for a lot of substance in their wine, so they favour long macerations (1 month). De-stemming, crushing, with occasional delestage.

The harvest

The grapes are sorted in the vineyard. Our tractors are equipped with a sorting table.
Leur objectif principal : limiter les phénomènes d’oxydation. La récolte est donc transportée par benne avant d’être vidée dans le conquet de réception.
Du conquet, la vendange est amenée au moyen d’une pompe dans la cuve en béton pour y effectuer sa fermentation alcoolique.

Pumping

Pumping over takes place twice a day, the temperature is controlled at around 28°C. The cooling is done by a cooling system and flags with an automatic regulation system. The harvest is cooled to 20°C before fermentation, given the climatic conditions of recent years.

Yeasting

Yeasting is not systematic (1 tank out of 2). The top of the vats are equipped with a chimney that allows the neighbouring vat to be gassed 🡪 Natural seeding with aromas.

Blending

After one month of vatting, the must is pressed. The free-run wines and the press wines are blended after tasting. Otherwise, the press wines, after MLF, are sent to the trade.

Maturing

The wines are aged in tuns for 6 to 8 months.

Quality control

A consultant oenologist monitors the wines throughout the year.

Bottling

We do our own traffic jams for better efficiency and responsiveness.
